Ballymore Demesne Tomato Soup

    One and a half pounds tomatoes.
    1 Onion
    1 Clove garlic
    2oz butter.
    Half a pint veg or beef stock
    Pinch bicarb of soda
    Salt,pepper and sugar.
    5 fl oz double cream (optional)

    Skin tomatoes and chop. Chop onion and crush garlic.
    Melt butter and saute onions and garlic for 5 minutes.
    Add stock and bicarb with tomatoes.
    Bring to the boil and simmer for 15 minutes.
    Blend with liquidizer.
    Reheat and season as required. Heat the cream and add if desired.
    Garnish with basil, parsley or cheese.

    I’ve never doubled up this recipe as I never have enough toms at any one time! Try it first and see if you like it. :-)

    I’ve not found a tomato soup I like yet, but am keen to try this one sounds lovely, with lovely crusty bread.

    I love it so would appreciate your feedback. If I don’t have quite enough tomatoes or don’t think they are flavoursome enough I add a chopped red pepper.

    I made it, Cilla, and it was delicious :walt: I don’t do sugar, so left that out and I couldn’t understand why it would need bicarb of soda so left that out, too ;-) I used parsley as I have it growing in abundance and I put in just a bit of creme fraiche. OH loved it as well :cool:

    I’m glad you enjoyed it Jane. I always add sugar when I’m cooking tomatoes to counteract the acidity. I think people used to put bicarb in to keep the colour in their veg ;-)
